This is my lovely little blog to follow my journey of going gluten free. I was diagnosed with hypothyroidism and Hashimoto disease a couple months back. I had hypothyroidism in the past in my early 20s but i never really kept up with it since at the time I lost my insurance, thought it was one of those things that just "went away", and generally ignorant of how the condition worked.
My hypothroidism got worse over time and after about 5 years, I've gained over 100 lbs since initial diagnosis 6ish years ago. I'm still working on getting my thyroid levels to normal and on the never ending search to find an endocrinologist who isn't stuck 20 years ago to their thyroid guidelines.
In addition, my "google" research has shown that gluten levels in bodies of people who have hypo/hashis also tends to be absorbed differently.
So, the point of this whole blog is an 8 week trial of going gluten free to try to see if it helps.
I have dieted, I have worked out. At one point for about 3 months I was seeing a dietician/nutritionist and a personal trainer. I lost 0 lbs in 3 months. I just gave up at that point. So, this is my last "ditch effort" to give something else a try. Some times gluten in gluten intolerant people will just pack on the pounds, so this effort is going to either give me the results I'm hoping for (even 1 lb a week would be great), or its going to be a failed effort - but regardless, atleast its an EFFORT to see why I have an inability to lose weight.
Each week I'll be trying new meals out that are gluten free and linking (if applicable) to their websites/blogs so that if you want to try - you'll have the recipe. Guess its time to sit down and figure out week 1 food :)
