Week 1 review/Week 2 menu

Week 1:  Pretty much most of the GF meals I tried really were pretty horrible.  The lemon/garlic shrimp was downright disgusting.  Balsamic pepper/chicken was Ok - hubby said he liked it, I was "eh".  Made the curry shrimp tonight and really disliked that as well.  Hubby said the curry was pretty decent, so I guess maybe my tastes are different than his.  Will do a weigh-in in the morning.

I fully admit, i did cheat once.  I went to a friend's birthday party who had a whipped topping cake instead of regular frosting.  I *hate* regular frosting, so I could have easily passed that up at the party, but since it was whipped topping, I gave in.

Week 2 Menu:

Monday: Left overs - lots of them in the fridge.

Tuesday:  GF Spaghetti and Meatballs with GF bread crumbs.

Wednesday:  PF Changs style lettuce wraps (substituting GF hoisen sauce)

Thursday:  Tacos with GF tortillas (I believe Mission corn-based tortillas are GF)

Friday:  Chicken Stir Fry

Saturday: Left Overs

Sunday:  Sweet and Sour Meatloaf

Week 1 Dinners

Here is week 1 of our Gluten Free dinners - recipes included if its complicated ;)

Monday:
Summer salad with baked chicken breasts
Parmesan baked potato fries

Tuesday:
Steak+A1 Sauce - which I have discovered is Gluten Free... A1 is my GO TO sauce for just about everything.
Baked Potatoes

Wednesday:
Lemon Garlic Shrimp
Asparagus with Olive Oil and Seasalt steamed

Thursday:
Chicken and Balsamic Peppers

Friday:
Buffalo Chicken (Frank's Red Hot Buffalo Sauce - GLUTEN FREE) over light rice.
Steamed Asparagus and broccoli with olive oil and sea salt

Saturday:
D&D night - so that means leftovers or salads.

Sunday:
Curried rice with Shrimp
This is my lovely little blog to follow my journey of going gluten free. I was diagnosed with hypothyroidism and Hashimoto disease a couple months back. I had hypothyroidism in the past in my early 20s but i never really kept up with it since at the time I lost my insurance, thought it was one of those things that just "went away", and generally ignorant of how the condition worked.

My hypothroidism got worse over time and after about 5 years, I've gained over 100 lbs since initial diagnosis 6ish years ago. I'm still working on getting my thyroid levels to normal and on the never ending search to find an endocrinologist who isn't stuck 20 years ago to their thyroid guidelines. In addition, my "google" research has shown that gluten levels in bodies of people who have hypo/hashis also tends to be absorbed differently.

So, the point of this whole blog is an 8 week trial of going gluten free to try to see if it helps. I have dieted, I have worked out. At one point for about 3 months I was seeing a dietician/nutritionist and a personal trainer. I lost 0 lbs in 3 months. I just gave up at that point. So, this is my last "ditch effort" to give something else a try. Some times gluten in gluten intolerant people will just pack on the pounds, so this effort is going to either give me the results I'm hoping for (even 1 lb a week would be great), or its going to be a failed effort - but regardless, atleast its an EFFORT to see why I have an inability to lose weight. Each week I'll be trying new meals out that are gluten free and linking (if applicable) to their websites/blogs so that if you want to try - you'll have the recipe. Guess its time to sit down and figure out week 1 food :)
